Prep Ahead Shredding Chicken

Prep Ahead Shredded Chicken (Pressure Cooker + Freezer Friendly)

This is the easiest shredded chicken you’ll ever make, and it’s the one recipe that makes the rest of your week feel lighter. Juicy chicken thighs cook in broth with a few simple seasonings, then get frozen in perfect 1-cup portions so dinner is basically half done before you even start. It’s naturally gluten-free and dairy-free (just check your broth label), and it’s ready for tacos, soups, wraps, salads, and bowls whenever you need it.

Why You Will Love This Recipe

I make this when I know the week is going to be busy and I want future me to feel taken care of. It takes about 30 minutes, most of it hands-off, and you end up with ready-to-go chicken that works in so many meals. This is one of those small habits that makes a big difference.

  • Hands-off cooking. You add everything to the pot, close the lid, and walk away. No babysitting a pan on the stove.
  • Juicy every time. Chicken thighs stay tender and moist, even after freezing and reheating.
  • Simple pantry seasonings. Salt, pepper, paprika, and onion powder are probably already in your spice drawer.
  • Freezer friendly in perfect portions. Each 1-cup portion is just right for a weeknight meal, so you only thaw what you need.
  • One base, so many meals. Tacos tonight, soup next week, salads for lunch. Same chicken, totally different dinners.
  • Naturally gluten-free and dairy-free. Real food that fits a lot of different tables without any special ingredients.

Ingredients Overview

You’ll find exact measurements in the recipe card below. Here’s how the ingredients work together.

For the chicken

  • Boneless, skinless chicken thighs are the star here because they stay juicy and shred beautifully, even after a trip to the freezer.
  • Chicken broth keeps the chicken moist while it cooks and gives you flavorful juices to freeze right along with it. Vegetable broth works too.

For the seasoning

  • Sea salt brings out the natural flavor of the chicken and seasons the broth at the same time.
  • Black pepper adds a gentle warmth without making it spicy.
  • Paprika gives a little color and a mild, slightly sweet flavor. Smoked paprika is a fun swap if you have it.
  • Onion powder adds savory depth with zero chopping, which is exactly what we want on a busy day.

How To Make Prep Ahead Shredded Chicken

Here’s how it comes together.

Step 1: Add everything to the pot.

Place the chicken in my favorite multi-purpose cooker, then pour the broth over the top and add the seasonings. Give it a stir and make sure the chicken is covered in broth as much as possible. Pro tip: spreading the thighs out in a single layer helps them cook evenly.

Step 2: Pressure cook.

Close the lid and pressure cook on high for 10 minutes. Let it naturally release for another 10 minutes before you open it. Pro tip: that natural release is what keeps the chicken tender, so try not to rush it.

Step 3: Let it cool.

Remove the lid and let the chicken cool for 10 to 15 minutes. It’s much easier and safer to shred once it’s not steaming hot.

Step 4: Shred it the easy way.

This is my favorite trick. Place a piece of foil over the pot, leaving a small hole on one side, and use a hand mixer on low to shred the chicken right in the pot. It takes about 45 seconds. Pro tip: the foil keeps the juices from splattering all over your kitchen.

Step 5: Portion and freeze.

Pour the chicken, along with all those juices, into these silicone freezer molds. They’re my favorite way to freeze it for future meals because every portion comes out exactly 1 cup. Freeze overnight, then pop the portions out and store them in a labeled gallon zip-top bag. Pro tip: write the date on the bag so you always know what’s in your freezer.

Storage, Reheating & Make Ahead

Fridge storage

Keep any chicken you plan to eat soon in an airtight container in the fridge for 3 to 4 days.

Freezer storage

Store the frozen portions in a labeled zip-top bag. For the best flavor and texture, use them within about 3 months.

Reheating

Thaw a portion in the fridge overnight, then warm it in a skillet with a splash of broth or in the microwave. For soups, you can drop the frozen portion right into the pot.

Make ahead tips

This is a great one to make on a Sunday. Double the batch if your cooker is big enough, and you’ll have chicken ready for weeks.

Substitutions and Variations

  • If you don’t have a hand mixer. Two forks work great. It just takes a couple of extra minutes.
  • If you only have chicken breasts. You can use them, but they’re leaner and can dry out faster than thighs. Make sure they’re cooked through and keep them in their juices.
  • If you don’t have a pressure cooker. A slow cooker works too. Cook until the chicken shreds easily with a fork.
  • For taco night. Add a little chili powder and cumin to the seasonings before cooking.
  • For a smoky twist. Swap regular paprika for smoked paprika.
  • If you want it vegetable-based. Use vegetable broth instead of chicken broth.

Health Benefits At A Glance

  • Chicken thighs are rich in protein, which helps keep you full and satisfied.
  • Chicken broth adds flavor and moisture without needing heavy sauces.
  • Paprika brings color plus a little boost of antioxidants.
  • Simple seasonings mean you know exactly what’s in your food, with nothing hidden.
  • Cooking at home puts you in charge of the ingredients, and that’s a small habit that adds up.

Ways To Serve This Shredded Chicken

  • Tacos. Warm it with a little extra seasoning and pile it into tortillas with your favorite toppings.
  • Soups. Drop a frozen portion right into chicken tortilla soup, white chicken chili, or a simple veggie soup.
  • Wraps. Roll it up with greens, avocado, and a drizzle of your favorite sauce for an easy lunch.
  • Salads. Toss it over greens for a quick protein boost that actually keeps you full.
  • Bowls. Layer it over rice or quinoa with roasted veggies and a sauce you love.

Shelley’s Tips

  • Freeze the juices with the chicken. That’s what keeps it moist when you reheat it.
  • Label and date your bag so nothing gets lost in the freezer.
  • Drop frozen portions straight into soups. No thawing needed.
  • No hand mixer? Two forks do the job just fine.
